Easy to prepare, these bars come together in a few simple steps. First, press the oat mixture into a baking dish to form the crust, followed by a generous layer of blueberry filling. Crumble the remaining oat mixture on top before baking to golden perfection.

These Blueberry Oat Crumble Bars are not only delicious but also nutritious, providing a good source of fiber and antioxidants from the oats and blueberries. They are perfect for any time of day and are sure to satisfy both kids and adults alike.

How to make Blueberry Oat Crumble Bars

Begin by preheating your oven to 350°F (180°C). Slightly grease a 9×13 inch (23×33 cm) pan and line it with parchment paper, ensuring that the edges extend beyond the sides of the pan to make it easier to lift the bars out.

Ingredients

For the crust

  • 1 ½ cup (190g) all-purpose flour
  • 2 cups (200g) rolled oats
  • 3/4 cup (150g) sugar
  • 1 tsp (4g) baking powder
  • 1/2 tsp (2g) salt
  • 1 cup (226g) unsalted butter , room temperature
  • 2 tsp (10g) vanilla extract

Blueberry Filling

  • 20 oz (600g) fresh blueberries
  • 1/4 cup ¼ cup (50g) sugar
  • 2 tbsp (16g) cornstarch
  • juice from a lemon

Instructions

Prepare the crust.

  • Preheat oven to 350F (180C). Slightly grease a 9×13 inch (23x33cm) pan and line with parchment paper, in such a way that some edges are longer to make it easy to lift it up once it's set.
  • In a bowl, combine flour, oats, sugar, baking powder and salt. Add butter and vanilla and stir until combined and crumbly.
  • Press ⅔ of the crumb mixture into the bottom of the pan.

Prepare the blueberry filling.

  • Place the blueberries into a bowl. Add sugar, lemon juice and cornstarch and toss to coat. Spread the blueberries over the crust.
  • Sprinkle the reserved ⅓ crumb mixture over the blueberries.
  • Bake for 40- 50 minutes or until lightly browned.

To add an extra layer of nourishment, I’ve included creamy peanut butter and buttermilk, which not only enhance the texture but also boost the overall health benefits. The result is a moist brownie that’s rich in protein, vitamins, and minerals.

Perfect for breakfast, a midday snack, or a post-dinner dessert, our healthy oatmeal brownies are a great addition to any diet.

How to make oatmeal brownies

Begin by preheating the oven to 350°F (180°C). Butter the sides and bottom of an 8-inch (20 cm) square baking pan and line it with parchment paper for easy removal.

In a large bowl, whisk together the eggs and honey until well combined. Add the vanilla extract and peanut butter (or vegetable oil) and mix well to combine. Incorporate the buttermilk, continuing to mix until the batter is smooth.

Next, add the salt, baking powder, cocoa powder, and oats to the bowl, mixing well to ensure all ingredients are evenly distributed. Fold in ⅓ cup (60g) of chocolate chips or chunks, blending them into the batter.

  • Preheat oven to 300 F (150C). Grease with butter an 8-inch (20cm) square baking pan. Line with parchment paper.

Prepare the crust.

  • In a large bowl add the butter, sugar, vanilla and salt. Mix until creamy.
  • Incorporate the flour, ground almonds and cinnamon.
  • Press the mixture evenly onto the bottom of the prepared baking pan.
  • Bake for about 15-18 minutes until lightly golden brown. Set aside and let cool slightly.
  • Turn on the oven to 350 (180C).

Prepare the crumble topping.

  • In a large bowl combine rolled oats, flour, ground almonds, brown sugar and cinnamon.
  • Add the melted butter and mix until crumbs are formed. Set aside.

Prepare the apple filling.

  • Peel and core the apples and cut into ¼-inch (6mm) slices.
  • In a medium bowl toss the apple slices with sugar, flour, cinnamon and nutmeg.
  • Spread the tossed apples over the crust.
  • Sprinkle the crumble topping over the apples.
  • Bake for 30–35 minutes or until the crumble is lightly browned and the apples are tender.
  • Let cool at room temperature then chill for 2 hours.
  • Cut into bars and serve with a drizzle of salted caramel sauce.

How to make Biscoff Chocolate Bars

For the cookie layer, begin by placing the cookies into a food processor. Give them a whirl until they become crumbs. 

Now, add in the Biscoff spread and melted butter. Process everything until they mix perfectly and the mixture sticks together.

Ready your 8-inch (20cm) square pan by giving it a light greasing. Lay parchment paper inside, making sure to let some hang over the edges. This clever trick will help you lift the treat easily once it’s ready.

Pour the combined mixture into the pan. Press it down with the back of a spoon. Pop it in the freezer while you prepare the chocolate topping.

For the chocolate layer, melt chocolate over a gentle bain-marie method, with 2 tablespoons of Biscoff spread and 2 tablespoons of cream to make it extra luscious. Once it’s all smooth, spread this melted chocolate over the cookie layer.

To add a final touch of crunch, sprinkle on some Lotus Biscoff Crumbs. Give it a good 2 hours in the fridge to set. 

When the time is right, lift those bars using the parchment paper handles. Slice, savor, and enjoy the symphony of Biscoff magic and chocolate richness.

For the Lotus Biscoff Cookie Layer

  • 7 oz (200g) Lotus Biscoff cookies
  • 1/3 cup (70g) unsalted butter, melted
  • 1/2 cup (120g) Speculoos, Biscoff spread

Chocolate Biscoff Layer

  • 7 oz (200g) semisweet chocolate
  • 2 tbsp (30g) Speculoos, Biscoff spread
  • 2 tbsp (30g) whipping cream

For topping

  • Biscoff Lotus cookie crumbs

Instructions

  • Place the Lotus Biscoff Cookies into the bowl of a food processor and blend until crumbs form. Add Biscoff spread and melted butter and process until completely combined and the mixture holds together.
  • Slightly grease an 8-inch (20cm) square pan and line with parchment paper, in such a way that some edges are longer to make it easy to lift it up once it's set.
  • Spread the mixture into the prepared pan and press with the back of the spoon to create a smooth surface.
  • Freeze until you prepare the chocolate topping.
  • Melt chocolate over bain-marie with 2 tablespoons of Biscoff spread and 2 tablespoons of cream, over low heat. Spread the melted chocolate over the cookie layer.
  • Sprinkle with Lotus Biscoff cookie crumbs.
  • Refrigerate for 2 hours to set.
  • Bars can be frozen too for later use. Enjoy!

How to make the blueberry cheesecake bars

There are few simple steps you need to follow to create this mouthwatering treat that will impress your family and friends. First prepare the blueberry sauce, then continue with the crust and cream cheese filling. Assemble the cake and bake. Chill and enjoy of the best cheesecake bars ever.

How to prepare the blueberry sauce 

In a saucepan, combine fresh blueberries, sugar, lemon juice, and cornstarch. Stir the mixture and bring it to a boil. Allow it to simmer for approximately 5 minutes until the blueberries become soft and the sauce thickens. Once done, strain the sauce and set it aside to cool.

How to make the crust 

Preheat your oven to 350°F (180°C). Take an 8-inch (20cm) square springform pan and line it with parchment paper. In a food processor, crush graham crackers or digestive biscuits until they turn into fine crumbs.

Add melted butter and sugar to the crumbs and mix until they are evenly moistened. Press this crumbly mixture firmly onto the bottom of the prepared pan using the back of a spoon. Bake the crust in the preheated oven for 10-13 minutes until it turns golden. Once baked, set it aside to cool completely.

How to prepare the cream cheese filling 

In a large bowl, beat the cream cheese until it becomes smooth and creamy. Add sugar, a pinch of salt, and cornstarch to the cream cheese, mixing until everything is well combined. Crack an egg into the mixture and blend it thoroughly. Stir in the vanilla extract, lemon zest, and sour cream, ensuring a smooth and well-blended batter. Be cautious not to overmix the batter to avoid incorporating excess air.

How to assemble and bake the blueberry cheesecake bars 

Pour the prepared cream cheese filling over the cooled crust in the pan. Take the blueberry sauce you prepared earlier and gently spoon it on top of the cream cheese layer. Use a skewer to create beautiful swirls on the surface, combining the two layers to create an enticing marbled pattern.

Lower the oven temperature to 300°F (150°C) and bake the cheesecake bars for 25-30 minutes. Once done, remove the pan from the oven and run a sharp knife around the inner edge to loosen the bars. Allow the cheesecake to cool completely at room temperature. Cover the pan and refrigerate the bars overnight to allow them to set perfectly.

  • 1 tbsp (15ml) lemon juice
  • 1 tsp (2g) cornstarch

Cream Cheese Filling

  • 9 oz (250g) cream cheese , room temperature
  • 2 tbsp (30g) sugar
  • 1/4 tsp (1g) salt
  • lemon zest from a lemon
  • 1 tsp (5g) vanilla extract
  • 1 large egg , room temperature
  • 1/4 cup (60g) sour cream
  • 2 tsp (4g) cornstarch

Instructions

Prepare the blueberry sauce.

  • In a saucepan add the blueberries, sugar, lemon juice and cornstarch.
  • Bring to a boil and let it simmer for about 5 minutes.

  • Place the crackers or digestive biscuits into the bowl of a food processor and crush until crumbs form. Add sugar and melted butter and mix until evenly moistened.

  • Add the egg and mix until it is well incorporated. Add vanilla extract, lemon zest and sour cream. Mix until well combined. Try to not overmix the batter to incorporate as little air as possible.

This Chocolate Honeycomb Toffee is an easy-to-make candy treat that can be prepared at home with just six simple ingredients. It’s hard to resist having just one piece, as everyone will surely crave for more!

How to prepare the chocolate honeycomb toffee

It may look like it’s difficult to make but it is actually very easy. You will definitely need a cooking thermometer and to carefully follow all the recipe steps, as you will work with a very hot dish.

Start by lining with parchment paper a 8-inch (20cm) square baking pan, that is at least 2.3 inch (6cm) deep.

In a large pan, mix together the water, sugar, glucose and honey. Heat until the ingredients dissolved. Put the thermometer into the pan and let the ingredients boil until the temperature reaches 295 F (146C). 

Immediately take the pan off the heat and add the baking soda all at once, stirring at the same time. The mix will start to rise very quickly, at this point stop the stirring and while it’s still bubbly and hot, pour it into the prepared pan. Leave it to cool completely, for about 2 hours, until the toffee becomes hard like candy. Take it out from the pan, remove the parchment paper, and place it on a cooling rack. Under the cooling rack put a large tray, so that you don’t make a big mess when pouring the chocolate.

Melt and temper the semisweet chocolate. I recommend tempering the chocolate, otherwise it won’t cool fast enough and you’ll make a big mess. Pour half of the chocolate all over the honeycomb, cover the edges as well, let it cool completely, then flip it upside down and pour the remaining chocolate on the bottom. For decoration, I used Oreo crumbs and almond flakes, but you can put whatever sprinkles you have in the kitchen. Now you can cut or break it in chunks. Store it in an airtight container at room temperature.

Ingredients

  • 1 ¼ cup (250g) sugar
  • 5 oz (150g) liquid glucose
  • 2 ½ tbsp (50g) honey
  • 4 tbsp (60ml) water
  • 1 tbsp (15g) baking soda
  • 4 oz (120g) semisweet chocolate , tempered

Instructions

  • Decorate with Oreo crumbs, almond flakes, or sprinkles while the chocolate is still warm.
  • Let it cool.
  • Then turn upside down the toffee and cover the bottom of the toffee with the remaining chocolate. Let it cool.
  • With a sharp knife, cut the honeycomb toffee as you like or you can break it into chunks. Enjoy!

Chocolate and sesame are a very good match, the tahini paste and the browned butter add a very subtle nutty flavor, which makes these bars a real treat! The bars have a crunchy texture and a lightly sweet, spiced flavor that goes perfectly alongside a cup of tea or coffee. 

How to make Tahini Chocolate Bars

These bars are easy and quick to prepare. Start by making the browned butter. In a saucepan, over medium-low heat, melt all the butter, whisking frequently. Continue to cook the butter for about 5-8 minutes, until it turns golden brown. Foam will subside and milk solids will form on the bottom of the pan. It will smell buttery and nutty. Immediately remove the pan from the heat and sieve the melted butter into a heatproof bowl to stop the cooking process.

Preheat the oven to 350F (180C), and line with parchment paper an 8-inch (20 cm) square baking pan. 

In a bowl, mix together the tahini paste, brown sugar, and browned butter. Add in the egg and the egg yolk, and mix well until incorporated. Then add in all the dry ingredients and mix until combined. At the end add in the chocolate chips. Bake for about 25 minutes, until golden. Leave to cool completely.

Use a sharp knife tocut it into squares.

Instructions

Prepare the browned butter.

  • In a saucepan, over medium heat, completely melt the butter, whisking frequently.
  • Continue to cook the butter for about 5-8 minutes, until it will turn golden brown and milk solids will form on the bottom of the pan. It should smell very nutty.

These pumpkin cream cheese brownies are one of the best pumpkin desserts you can prepare during the fall season. They are moist and fudgy, rich and chocolatey and bursting with flavor. If you love chocolate and pumpkin desserts then these brownies are the right recipe for you. 

These pumpkin brownies consist of a dense chocolate brownie layer at the bottom with a generous pumpkin cream cheese layer on top that beautifully swirls into the brownie layer. It looks so impressive and is simply irresistible.

How to make pumpkin cream cheese brownies. 

The recipe for these brownies is really easy and quick. First, prepare the brownie batter. For this make sure you use good-quality semisweet chocolate and cocoa powder. Their flavor is really important to get the best results. 

Reserve about half of cup of brownie batter and pour the rest into the prepared pan. 

Fall Pumpkin brownies

Now it’s time to prepare the pumpkin cream cheese layer. Mix the cream cheese with sugar and egg. Incorporate the pumpkin puree and spices. Spoon the pumpkin cream cheese mixture on top of the brownie layer. Spoon the remaining brownie batter. Use a knife or skewer to create swirls. 

Bake for about 30 minutes or until a toothpick inserted into the center comes with few moist crumbs attached. Let the brownies cool completely before serving. 

For the pumpkin desserts, I like to prepare my pumpkin puree. I usually roast it in the oven but you can also consider steaming or boiling it. I like to do this in advance, let it cool and puree it and then freeze it in small batches until needed.

  • 1 tsp (5g) vanilla extract
  • 1 tbsp (8g) cocoa powder
  • 1/2 tsp (2g) salt

Cream Cheese Pumpkin Layer

  • 8 oz (230g) cream cheese , room temperature
  • 2/3 cup (160g) pumpkin puree
  • 1/4 cup (50g) sugar
  • 1 egg
  • 1/2 tsp (2g) cinnamon
  • 1/4 tsp (1g) ginger
  • 1/4 tsp (1g) nutmeg
  • 1/4 tsp (1g) cloves
Makes: 8 x 8inch rectangle

Instructions

  • Preheat the oven to 350F (180C). Butter the sides and bottom of a 8-inch (20cm) springform pan and line the bottom with parchment paper.
  • Place 2 oz (60g) semisweet chocolate and butter in a medium bowl and melt over a bain-marie, occasionally stirring, until smooth. Stir in the sugar, then remove the bowl from the pan. Cool slightly.
  • Incorporate the eggs one at a time into the mixture and whisk until well combined. Stir in the vanilla extract and salt. Then add the cocoa powder and flour and stir well.
  • Fold in the remaining 2 oz (60g) chocolate chips or pieces.
  • Reserve about ½ cup (120g) of batter for later and pour the rest in the prepared pan.

Prepare cream cheese pumpkin layer.

  • Add cream cheese into a medium bowl and stir until smooth. Add sugar and egg and mix to combine.
  • Add pumpkin puree and mix to combine. Add cinnamon, ginger, nutmeg and cloves and mix to combine.
  • Add spoons of cream cheese mixture on top of the brownie batter. Add teaspoons of reserved brownie on top. Use a skewer to create swirls.
  • Bake for about 30-35 minutes until a toothpick inserted into the center comes out with a few moist crumbs sticking to it.
  • Remove the brownie from the oven and cool completely before serving.
  • Keep the leftovers at room temperature for no more than 2 days and refrigerated for up to 4-5 days. Enjoy!
