I love this Greek Salad, known as Horiatiki in Greece as it bursts with fresh flavors and vibrant colors. This salad, a staple of Mediterranean cuisine, highlights simplicity and quality ingredients. It's a perfect appetizer or side dish, but it can also stand alone as a light, refreshing meal.

Ingredients
  

  • 1 pound  (450g) tomatoes , about 3-4 tomatoes
  • 1 medium red onion (about 2.5 oz - 80g)
  • 7 oz (200g) cucumber
  • 4 oz (120g) green pepper , about 1 medium pepper
  • 1/3 cup (70g) black olives
  • 7 oz (200g) block feta cheese
  • 1 tbsp (15g) red wine vinegar
  • 1/4 cup (60g) extra virgin olive oil
  • 1 tsp dried oregano
  • salt and freshly ground black pepper

Instructions
 

  • Cut the tomatoes into wedges.
  • Cut the cucumber into thick moon slices.

  • Slice the onion into thin rings.

  • Slice the green pepper.

  • Add the vegetables to a salad bowl. Add the black olives too.

  • Season with salt, pepper and some oregano. Add some extra virgin olive oil and red wine vinegar. Toss everything together.

  • Top the salad with a block of feta cheese.
